It’s so perfect for the end of summer and takes just minutes to make. The pea & avocado dip is totally refreshing and goes beautifully with the sweet potatoes. I love this recipe on its own or with a bowl of veggies for lunch. It tastes almost as heavenly as it looks and is a fantastic way to spice up your palate with ingredients that are likely in your kitchen right now.

Ingredients
  1. 1 large or 2 medium sweet potatoes
  2. 2 tablespoons olive oil
  3. 1 tablespoon coriander
  4. 1 teaspoon chili powder
  5. ¼ tsp sea salt
Instructions
  1. Preheat oven to 375*
  2. Wash and slice the sweet potatoes into thick wedges. Pour them into a bowl, top with the remaining ingredients, stir, and spread onto a baking sheet. Bake for 20-25 minutes, then remove from the oven, let cool, and enjoy!

Ingredients
  1. 2 cups frozen peas, thawed
  2. 1 ripe avocado
  3. 2 handfuls fresh cilantro
  4. 4 heaping tablespoons, tahini
  5. Juice of 2 lemons
  6. 3 cloves garlic
  7. ½ tsp ground cumin
  8. 1 tablespoon apple cider vinegar
  9. 1 tablespoons olive oil
  10. Salt
Instructions
  1. The directions couldn’t be simpler – just thaw the frozen peas, then add them with the remaining ingredients to a food processor and blend for about a minute, or until smooth. Serve with the sweet potato wedges or enjoy on its own.
