Fall’s Here Apple Cinnamon Bars

Hey hey! It’s officially Fall! Is there any better season for cozying up in a blanket and waiting for something delicious to come out of the oven. On the blog today are these AMAZING Apple Cinnamon Cake Bars! They’re really easy to whip together in a few minutes and are so unbelievably delicious – they’re basically Fall in food form! Plus, they’re totally healthy. These are gluten-free, vegan, and don’t use any refined sugar. Instead, they’re spiced with cinnamon and sweetened naturally with apples and almond flour. Absolutely amazing!

Apple Cinnamon Bars

My childhood best friend’s mom used to always make apple cinnamon cake bars for us when I was a kid and with the sweet tooth I had, they rarely lasted more than a few minutes out of the oven! These were the favorite dish for Gilmore Girl and sleepover parties for years.

 

I’ve switched to eating a plant-based diet and avoid gluten and sugar, but that doesn’t mean I don’t crave my favorite childhood foods! 😉 I’m really excited to share this amazing healthy version of my friend’s recipe with you all. There is nothing more perfect for a late September weekend and I know you’ll love it. It’s delicious enough that you’ll want to eat it all the time and healthy enough that you totally can! Enjoy this as a sweet breakfast or delicious dessert.

Apple Cinnamon Bars

Serves 8-12

1 ½ cup almond flour

½ cup rice flour

1 ½ tablespoons cinnamon (plus some to dust on top)

½ teaspoon baking soda

¼ cup flax meal

3 apples (leave some to top on the bars)

2 tablespoons coconut oil

1 teaspoon vanilla

½ cup apple sauce

¼ almond milk

3 tablespoons maple syrup

 

Preheat your oven to 350*F

 

Start by mixing the dry ingredients. Combine the almond flour, rice flour, cinnamon, baking soda, and flax meal in a large bowl.

 

Next, thinly slice the apples into small ¼ – ½ inch pieces. You’re putting these in the dough, so it’s good to have them be a bit small. Cut some larger pieces on top for decorating as you like. Set the apples aside in a bowl.

 

For the wet ingredients, combine all in a bowl. First, thaw or melt the coconut oil, then combine with the vanilla, apple sauce, almond milk, and maple syrup, then stir together. Slowly add the mixture to the dry ingredients, then stir to combine. Stir in the apples, leaving some on top for decoration.

 

Bake in an 8×11” pan for 30 minutes
