Energy bites are fabulous way to get some extra vitamins in when snacking on the move. This recipe is great to have handy because it’s so simple and nourishing. One energy bite has so many fantastic ingredients in it that it’s almost unbelievable! I work full-time and travel often for my job, so it’s super important to keep my energy level and immune system buzzing. These babies do just the trick.

Spirulina, besides having a very funny name, is one of the world’s most nutritionally complete superfoods. It’s a blue-green algae that is not only a source of complete plant-based protein, but also an immune booster superstar. This ingredient is loaded with calcium and promotes cell regeneration, helping you heal faster and stay healthier on the move. The really great thing about spirulina is that it helps control inflammation which is the grand-daddy of most food-related allergy symptoms and general health issues that are out there. It also improved digestion which, let’s face it, travelers always need J  The cashews add a pinch of protein and wonderful flavor. I like having them raw, but they’re also great toasted. Dates and coconut add a wonderful creaminess and put some good fats in your belly to keep you satiated and control sugar spikes throughout your day.

Store them in your refrigerator for up to 2 weeks and just take them out and put them in a baggie when you’re heading out the door for the day. Bring these to work or in your bag on your next flight and you’ll travel happy knowing you always have a healthy, sustaining, greens-packed snack just a reach away.

Ingredients
  1. 1 cup raw cashews
  2. 1 cup shredded raw coconut or coconut chips
  3. 1 tablespoon coconut oil
  4. 1 tablespoon spirulina powder
  5. 1 teaspoon cinnamon
  6. 10-12 medjool dates
Instructions
  1. Start by blending the nuts in the food processor until you get a coarse meal. I put everything in without taking this step once and my food processor got very angry. Next put all other ingredients into your processor, blending to allow everything to combine. Unplug the processor, remove the bowl and blade, and begin rolling the mixture into balls between your palms. Put them in the fridge and store in an airtight container for at least an hour before enjoying. Store for up to 2 weeks.
