Zucchini Bread Hemp Oatmeal

Who said that you couldn’t have veggies for breakfast and love them? I was looking for a way to add some greens to my morning oats and started adding everything amazing in my fridge until THIS amazing recipe happened. Eating this oatmeal is like taking a big bite of the best zucchini bread on the planet. It’s honestly amazing and will make you feel absolutely wonderful. This recipe is packed with so much goodness: fresh zucchini, almond milk, hemp, banana, and almond butter! It’s everything you need to start your day right. Zucchini is loaded with Vitamin C and other anti-inflammatory properties and gives you a fantastic boost of fiber. Banana comes with a huge boost of potassium which helps regulate blood pressure and relieve sore muscles after a morning workout.

Zucchini Bread Hemp Oatmeal

Toss in the extra hemp seeds and hemp protein powder for extra plant-based protein and omega-3s to make you glow. This recipe is amazing as either overnight oats or stovetop oats in the morning and just takes minutes to throw together either way. It might feel super weird to toss fresh zucchini into your oatmeal, but I promise you’ll love it!

Ingredients
  1. 1 /2 cup oats
  2. 1 cup almond milk
  3. 1/3 cup water
  4. ½ fresh zucchini, grated
  5. ½ banana, mashed
  6. 1 tablespoon hemp seeds
  7. ½ teaspoon vanilla extract
  8. 1 teaspoon cinnamon
  9. 1 tablespoon almond butter
Optional
  1. 1 tablespoon protein powder (I like hemp protein powder here)
Instructions
  1. Add the oats, almond milk, and water, to a small pot. Bring to a boil, turn the heat to a simmer, then add the grated zucchini and mashed banana. Simmer for 5 minutes, then stir in the remaining ingredients, heat for an additional 2 minutes, and serve it up! Toss some extra almond butter and shredded coconut on top to serve.
